Smothered Cabbage

Smothered Cabbage. This dish can be served as a side or a main course with hot rice. Smoked sausage is a good substitute for the pork.


  • 1 tbsp. oil
  • 1 tbsp. sugar
  • 1 head cabbage, chopped
  • 1/2 lb. pork meat, back bone does well or smoked sausage
  • Salt and pepper to taste


  1. In a heavy skillet, heat oil.
  2. Add sugar and dissolve letting the sugar brown some. Do not burn.
  3. Add chopped cabbage, meat, salt and pepper.
  4. Lower heat, cover and simmer until meat is done, stirring occasionally.
