Lette's Hot Pepper Jelly

Pop's Cajun Cookery says: "One of my favorite things for a snack, especially with a nice red wine, is hot pepper jelly and pepper jack cheese on a cracker. Mrs. Pop has the best I have ever tasted...try it, is great!"

Ingredients:

• ¾ cup Bell Pepper chopped fine
• ¼ cup Hot Pepper seeded and chopped fine
• 6 cups sugar
• 1 ½ cups cider vinegar
• 1 - 3 oz. package Certo
• Green or Red food coloring
  

Directions:

1. Boil first 4 ingredients for 1 minute
2. Skim foam from top
3. Let set 5 minutes
4. Add Certo and food coloring
5. Pour into ½ pint jars
