Fried Crawfish and Boudin Po'boy
Ingredients:
- Fried crawfish tails (as much, or as little as you like)
- 1 link of boudin
(or more) removed from casing and heated
- 1 loaf of po'boy type bread, toasted
or use as is
- lettuce
- tomato
- Cajun mayonnaise or remoulade sauce (or use
just plain Mayo if you must!)
- mustard (optional)
- onions (optional)
- pickles (optional)
- lettuce optional)
Directions:
- Split po'boy bread lengthwise
- Spread mayonnaise, or remoulade
sauce on both sides
- Add fried crawfish tails
- Top with the boudin
- Add tomatoes, mustard, onions, pickles and lettuce (if using)
- Close
together and enjoy!
*Note from Cajun Cooking Recipes: Some folks
like their bread toasted, some like it soft. I like mine barely toasted.
Lightly brown, but still a little soft. Fix it the way you like it! For
a little extra kick, add some type of hot sauce! You can always add some
hot sauce mixed with the mayo to give it an extra kick too!
