Cajun Stuffed Manicotti

Cajun Stuffed Manicotti is a dish with a twist on your ordinary stuffed manicotti!

 

Cajun Stuffed Manicotti Recipe

Recipe Ingredients:

  • 1 pack Manicotti noodles, cooked to package directions
  • 1 pound hot Cajun sausage
  • 1 pound mild Cajun sausage
  • 2 medium Onions, chopped fine
  • 3 tablespoons Garlic, chopped
  • 5 (10 oz.) frozen chopped spinach
  • 6 ounces Italian cheese
  • 6 ounces Italian seasoned bread crumbs
  • 3 ounces Pickapeppa sauce
  • 1 tablespoon Cajun seasoning
  • 1 container Sour cream (16 ounces)
  • ⅛ teaspoon Cayenne pepper
  • 2 tablespoons Olive oil

Cream Sauce for Manicotti:

  • 8 oz. whipping cream
  • 3 tablespoons Flour
  • 1 Stick butter
  • 6 ounces Italian cheese Mozzarella cheese

Directions:

  1. Cook sausage until done, chop fine and set aside. Sauté onions and garlic in 2 tablespoons olive oil until onions are tender and clear, and add sausage. Place spinach in microwave and thaw. When thawed, place in strainer. When the spinach has drained, add it to the sausage mixture and blend.
  2. Stir in the Pickapeppa sauce, Cajun seasoning and cayenne pepper and cook for five minutes. Blend in the cheese and bread crumbs for one minute and remove form heat. Fold in sour cream and blend well. Let cool. Cool Manicotti noodles according to package directions.
  3. When Manicotti has cooled, stuff with the sausage mixture.
  4. Melt butter and add flour. Stir rapidly being sure that the mixture does not turn brown. Warm the whipping cream in microwave for one minute and add to flour mixture. Stir in the cheese a little at a time and cook for about one minute or until smooth. Pour the cheese sauce over the Manicotti, and sprinkle the top with grated Mozzarella cheese.
  5. Bake for 20 minutes at 350 degrees.
