Cajun Shrimp Bisque



  1. In a 5-quart pot, sauté the onions in butter until soft.
  2. Add enough flour to absorb butter.
  3. Combine the shrimp, water, bay leaves, seasonings, and bring water to a boil. Continue boiling for 6 minutes.
  4. Pour the stock from the shrimp into the onion-flour mixture.
  5. Simmer for 45 minutes to 1 hour until thickened, stirring occasionally.
  6. Chop the shrimp into small pieces and add to the mixture.
  7. Cook 15 minutes longer, remove bay leaves and serve in bowls or cups.
