Cajun Roasted Potatoes with Green Peppers

Ingredients:

  • 2 pounds cut up potatoes
  • 1 tablespoon olive oil
  • 1 1/4 teaspoons salt
  • 1/2 cup chopped green bell pepper
  • 3/4 teaspoon paprika
  • 1/2 teaspoon finely minced garlic
  • 1/8 to 1/4 teaspoon ground cayenne pepper
  • 1/4 teaspoon thyme

Directions:

  1. Preheat oven to about 450 degrees.
  2. Combine potatoes and olive oil in a 13x9x2-inch baking pan.
  3. Sprinkle with seasonings and toss to coat well.
  4. Bake for about 30 minutes.
  5. Stir a few times during cooking.

Note: For easier clean up, you can line the baking pan with foil if desired.

Serves 4.
