Baked Oysters Recipe

Recipe Ingredients:

  • 1/4 lb butter
  • 2 cups celery onion chopped fine
  • 1 pint oysters
  • 4 hard boiled eggs, grated
  • 2 cups toasted bread crumbs
  • 1 cup parsley juice or water
  • Parsley

Directions:

  1. Melt butter, add onion and celery. Cook on slow fire until tender.
  2. Add oysters that have been cut up by scissors, and a little oyster juice. Cook about 5 minutes until oysters curl.
  3. Take off fire and mix with rolled toasted bread crumbs and grated eggs and parsley to season. Add salt, pepper and dampen with oyster juice or water.
  4. Put into oyster shells or greased Pyrex dish; sprinkle cracker crumbs on top and dots of butter.
  5. Bake at 350F about 20 minutes.
