This Creole style shrimp is made with Shrimp, tomato sauce, pepper sauce, vegetables and more. Easily microwaved.
4 Tbsp. oil
1 onion, minced
3 cloves garlic, minced
1 green pepper, chopped
2 Tbsp. parsley, minced
1 chicken bouillon cube
1 tsp. salt
4 dashes hot pepper sauce
1/4 cup water
1 (8 oz.) can tomato sauce
1 cup (8 oz.) okra, canned in vegetable sauce
9 oz. Shrimp, cleaned & deveined
1 1/2 cups cooked rice
Combine oil, onions, peppers and tomato sauce in a 1-quart casserole.
Cover and cook in microwave for 4 minutes. Rotate dish 1/2 turn, stir
and cook 2 minutes.
Add remaining ingredients, except rice. Cook uncovered 6 minutes.
Stir in Shrimp and cook 3 minutes or until Shrimp are pink. Do not overcook shrimp as they will become rubbery.
Serve over rice is desired.
