This delicious bread pudding is easy as well a good! Just make it right in your microwave.
2 tb Butter
1 c Milk
1/3 c Sugar
1/4 c Raisins
1 tsp. Vanilla extract
Salt to taste
1 1/2 c Cubed day-old bread
Preheat oven to 400 degrees. In a 1-quart micro-safe casserole, melt
butter. Add the eggs and beat well.
Stir in the milk, sugar, raisins, vanilla and salt. Add the bread cubes and toss to cover completely.
Stir a few times to help the bread cubes absorb the liquid cook until set, approximately 20 minutes.
