Oatmeal Macaroon Cookies

Ingredients:

• 1 cup butter
• 1 cup sugar
• 2/3 cup brown sugar
• 1 single egg
• 2 1/2 cup quick oatmeal
• 1 cup flour
• 1 cup coconut
• 1/2 tsp. salt
• 1 tsp. vanilla
• 1/2 tsp. soda dissolved in 2 T. hot water
  

Directions:

1. Mix all ingredients.
2. Drop on un greased cookie sheet and bake in 425 degree oven. Watch them carefully because they burn easily.
3. They usually take about 9-10 minutes.
4. Remove while they still look a little gooey.
5. Let them sit a minute before removing from pan.
