Garlicky Chicken Soup

Garlicky Chicken Soup


  • 3 1/2 cups home-made chicken broth
  • 1 head garlic (about 15 cloves)
  • 1 medium onion, quartered
  • 1 1/2 Tb each minced parsley and cilantro
  • 1 tsp. each minced mint and basil leaves
  • 1 tsp. curry powder
  • 1/2 tsp. red pepper flakes
  • salt to taste
  • 1 Tb fresh lemon juice


  1. Put all ingredients, except for lemon juice, into a pot and bring to a boil. Reduce heat and simmer for 30 minutes.
  2. Puree cooked garlic, onions, herbs with a little broth and stir back into the soup. Add lemon juice.
  3. For a clear broth, strain out solids.

This chicken recipe yields about 3 1/2 cups of soup.
