Homemade Dill Relish

This is a delicious homemade dill relish! Made with fresh cucumbers, and other tasty ingredients. Easily make your own.

Homemade Dill Relish

Ingredients:

  • 2 1/2 lbs. cucumbers peeled, seeded & diced
  • 1 onion, red pepper, green pepper diced
  • 1 1/2 tsp. minced garlic
  • 1/4 cup salt
  • 3 cups vinegar
  • 1/2 cup or less sugar(optional)
  • 2 tsp. dill seeds
  • 1 Tbsp. yellow mustard seeds
  • 2 tsp. celery seeds
  • 1/2 tsp. turmeric
  • 2 bay leaves

Directions:

  1. Place cucumbers, onion, peppers, and garlic in a large bowl.
  2. Combine salt and enough water to cover. Let sit for 6 hrs.
  3. Drain in colander, rinse and drain again.
  4. In a large pot, add sugar, vinegar and spices. Bring to a boil. Reduce heat and simmer 5 minutes.
  5. Add drained cucumber mixture and bring to a boil. Reduce heat and simmer uncovered 10 min.
  6. Discard bay leaves.
  7. Place in jars and seal.
  8. Let sit for at least a week before eating.
