Coca Cola Beef Roast
The Coca Cola in used with this beef roast, gives a similar effect like the old days of Cajun cooking.
Cooks used to, and some still do, caramelize sugar after browning the meat,
resulting in a delicious gravy.
- 2 - 3 pounds beef roast
- salt to taste
- black pepper and cayenne to taste or your favorite Cajun Seasoning
- 2 - 4 tbsp. flour
- 4 tbsp. oil or fat
- 1 can Coca Cola
- Season the roast with salt and pepper or your favorite Cajun seasoning.
Flour the roast on all sides.
- In a medium roaster, brown the roast on all
sides in the fat/oil. When browned, drain the fat off.
- Pour the Coca Cola
over the roast and place in a 325 degree oven. Cook for approximately 2 1/2
to 3 hours depending on desired tenderness. Sliced onions may be added as an
option in the last 30 minutes of cooking. If extra liquid is needed add
desired water for gravy thickness.
- Let stand 15 minutes before carving.
