Cajun Crawfish Casserole Recipe

Ingredients:

  • 2 c Crawfish tails; chop coarsereplace
  • 4 Hard-cooked eggs; chop coarsereplace
  • 1/2 c Celery; chop finereplace
  • 1/2 c Bell pepper; choppedreplace
  • 1 c Toasted bread crumbsreplace
  • 1/2 Stick butter meltedreplace
  • 1 c Yellow squash; boiled and drainedreplace
  • 1/4 c Half-and-halfreplace
  • 4 tb Shallots;  chop finereplace
  • 1 tb Garlic; chop finereplace
  • 1 ts Saltreplace
  • 1/2 ts White pepperreplace
  • 1/4 ts Red pepperreplace
  • 1 c Cracker crumbs; crumbled coarselyreplace
  • 1/4 c Parsley; chop finereplace

Directions:

  1. Combine everything in a large bowl, except cracker crumbs and parsley. Mix well.replace
  2. Butter insides of a 1-1/2-qt casserole and spoon the mix into it.replace
  3. Sprinkle the cracker crumbs over the top and garnish the surface with the parsley.replace
  4. Bake the dish for about 20-25 minutes in a 400~ oven.replace
  5. Serve hot.replace
