Baked Shrimp Creole with Shrimp Sauce

Recipe Ingredients:

  • 2 eggs, slightly beaten
  • 1/4 cup water
  • 2 cups shrimp, shelled/deveined
  • 2 cups cornflake crumbs
  • oil
  • salt to taste
  • pepper to taste
  • Cajun seasonings to taste (optional)

Shrimp Sauce

  • 1 cup chili sauce
  • 1 cup mayonnaise
  • 1/4 cup pickle relish
  • 1 egg, hard-cooked and chopped
  • 1/2 teaspoon prepared mustard
  • 1/2 teaspoon grated onion
  • 1 tablespoon lemon juice

Directions:

For The Shrimp:

  1. Preheat oven to 450F.
  2. Beat eggs slightly with water.
  3. Dry shrimp on paper towels; dip first into crumbs, then eggs, then into crumbs again.
  4. Spread shrimp in a baking pan pan that is well oiled so that they are not touching.
  5. Sprinkle with salt, pepper, and Cajun seasonings, if using.
  6. Turn shrimp until they are well coated with oil.
  7. Bake for about 6 to 8 minutes.
  8. You can serve the shrimp with the sauce, or use your favorite.

For The Shrimp Sauce:

  1. Combine all ingredients; chill.
  2. Serve with baked or broiled shrimp.

Serves 8.

*Note: If you would rather broiled shrimp, you can use the same recipe, but only broil the shrimp for about 2 minutes on each side.

Plain white rice goes well with this dish.
