This authentic Cajun gumbo recipe came from our good friend Evelyn
Brandon, on behalf of her mother, Mrs. Pat Brandon, who has been making this
gumbo for years. They do not share their recipes often, so I am very
grateful to them for sharing this one with us.
You can use seafood, fish, chicken, sausage, wild game, or a combination of any of these ingredients in this gumbo. Most Cajuns serve gumbo over rice, with a big piece of homemade cornbread on the side, and a big ole glass of iced tea.
Gumbo can taste even better the next day as it sits in the fridge overnight soaking up all the wonderful seasonings.
