Baked Steak And Lima Beans

Ingredients:

  • 1 lb. Dry Lima Beans
  • 4 Slices Bacon
  • 18 oz. (1 can) Tomato Juice
  • 1/2 tsp. Salt, Or To Taste
  • 1/2 tsp. Black Pepper
  • 6 c Water
  • 2 lb. Round Steak (cut in 1 inch strips)
  • 1 tb Packed Brown Sugar
  • 1 tsp. Dry Mustard

Directions:

  1. Rinse beans; add 6 cups of water.
  2. Bring to a boil; simmer 5 minutes.
  3. Remove from heat; let stand, covered, 1 hour. Do not drain.
  4. After 1 hour cover, simmer 30 minutes.
  5. In Cast Iron Dutch oven, cook bacon until crisp. Drain, reserve drippings.
  6. Crumble bacon; set aside.
  7. Coat beef with flour.
  8. Brown beef in hot drippings, pour off excess fat. Stir in beans and onion.
  9. Combine tomato juice, brown sugar, salt, pepper and mustard.
  10. Pour over beans and beef mixture.
  11. Bake covered in 325 degree F. oven until tender, about 1 1/2 to 2 hours.
  12. Serve hot topped with crumbled bacon and grated cheese to taste.
