Midweek Meat Surprise

Ingredients:

  • 1 lb. Lean flank steak; ground OR 1 lb. Very lean ground beef
  • 1/2 Onion; chopped
  • 2 tb Beef stock
  • 1/3 c Chopped red bell pepper
  • 1/3 c Chopped green bell peppers
  • Pepper
  • 1/4 tsp. Ground thyme
  • 1/2 pint Tomato sauce
  • 1 c Water
  • 2/3 c Uncooked rice

Directions:

  1. Sauté meat in a nonstick skillet until browned, drain off fat and place meat in a bowl.
  2. Sauté onion in stock or water until soft.
  3. Add remaining ingredients except meat.
  4. Cover and simmer until rice is tender, about 35 minutes.
