BUTTER PECAN COOKIES
1 C. butter
3/4 C. brown sugar
3/4 C. sugar
2 eggs
1 tsp. vanilla extract
2 1/4 C. sifted flour
1 tsp. baking soda
1/2 tsp. salt
1 C. finely chopped pecans
Cream butter and
sugars until light and fluffy. Add eggs and vanilla extract. Beat
thoroughly. Add sifted dry ingredients and nuts. Mix well. Drop from a
teaspoon onto an un greased cookie sheet. Bake at 375ºF for about 10
minutes or until delicate brown.
