Beef Medallions With Cognac Sauce

Ingredients:

  • 2 tablespoons ( 1/4 ) stick unsalted butter
  • 1/4 cup shallots or onion, diced
  • 1 teaspoon brown sugar
  • 1 1/2 cups beef broth
  • 1/2 cup Cognac
  • 1/4 cup whipping cream
  • 4 beef tenderloin or sirloin steaks (4 to 5 ounces each,  1 inch thick )
  • Fresh chives, diced

Directions:

  1. Melt 2 tablespoons butter in heavy saucepan over medium heat.
  2. Add shallots or onion and sauté until tender, about 4 minutes.
  3. Add brown sugar; stir 1 minute.
  4. Add the broth and cognac. Simmer until the sauce is reduced to 1/2 cup, about 20 minutes.
  5. Add cream and chives.
  6. Grill steaks until desired doneness, if grilled medium rare, about 4 minutes on each side.
  7. Season sauce with salt and pepper to taste.
  8. When steaks are done, remove to platter, pour sauce over and garnish with chives.
