Microwave Rocky Road Fudge

This rocky road type fudge is made with cocoa, milk, butter, sugar, pecans and more. Make this really easy by cooking it in the microwave.

Ingredients:

• 4 1/2 c Confectioner's sugar
• 1/2 c Butter or margarine
• 1/3 c Cocoa1/4 c Milk
• 1/4 tsp. Salt
• 1/2 c Pecans; chopped
• /2 c Miniature marshmallows
• 1 tsp. Vanilla extract
  

Directions:

1. In a large microwave safe bowl, combine confectioners sugar, butter, cocoa, milk and salt.
2. Microwave on high power 2 to 2 - 1/2 minutes or until butter is melted.
3. Add pecans, marshmallows and vanilla; stir until well blended.
4. Pour into an 8 inch square pan lined with greased aluminum foil.
5. Refrigerate about 1 hour or until firm.
6. Cut into 1 inch squares and store in an airtight container.
