This noodle style omelet is made with cheese, noodles, eggs, green peppers and more. Easily made in the microwave.
1 tsp. Salt
1/4 tsp. Pepper
2 c Cooked noodles
1 c Shredded Cheddar cheese
2 tb Finely chopped green pepper
1 tb Finely chopped pimiento
In a deep, 2-quart, heat-resistant, non-metallic casserole, beat the
eggs with salt and pepper. Stir in cooked noodles, Cheddar cheese, green
pepper and pimiento.
Heat, covered, in Microwave Oven 3 minutes stirring after each 1 minute cooking time.
Let stand 2 to 3 minutes at room temperature. Cut into wedges and serve.
