Pork Burritos

Ingredients:

  • 1 (4 lb.) pork roast
  • 2 (16 oz.) cans Ro-Tel tomatoes
  • 1 T. cumin
  • Salt and pepper to taste
  • Flour tortillas

Toppings:

  • Shredded Cheddar or Jack cheese
  • Tomatoes, diced
  • Sour cream
  • Guacamole
  • Salsa

Directions:

  1. Place pork in crock pot.
  2. Pour tomatoes including juice over the top.
  3. Sprinkle cumin and salt and pepper on top.
  4. Cook on HIGH for 6 hours or on LOW for 10 hours.
  5. Shred pork with 2 forks.
  6. Fill warm tortillas with pork and top with fillings of choice.

Recipe serves 4.
