Cashew Crunch Cookies

Cashew Crunch Cookies Recipe

Ingredients:

  • 1 C. butter or margarine, softened
  • 3/4 C. firmly packed light brown sugar
  • 1/2 C. sugar
  • 1 egg
  • 1 tsp. vanilla extract
  • 2 1/4 C. all-purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. cream of tartar
  • 1 1/2 C. finely chopped cashews

Directions:

  1. Beat butter at medium speed with electric mixer; gradually add sugars, mixing well. Add egg and vanilla extract; beat well.
  2. Combine flour, baking soda and cream of tartar; gradually add to creamed mixture, mixing after each addition. Stir in cashews.
  3. Drop cookie dough by rounded teaspoonful's onto lightly greased cookie sheets.
  4. Bake at 350ºF for 10 to 12 minutes or until lightly browned.

Recipe yields 7 dozen cookies.
