Brazil Nut Coffeecake Bars

Brazil Nut Coffeecake Bars  Recipe

Ingredients:

  • 2 cups sifted all purpose flour
  • 1 teaspoon baking powder
  • 1 1/3 cups granulated sugar
  • 4 teaspoons cinnamon
  • 1/2 cup soft butter or margarine
  • 1/2 cup soft shortening
  • 1 egg + 1 egg separated
  • 1 cup chopped Brazil nuts

Directions:

  1. Start heating oven to 350 degrees.
  2. Into bowl, sift flour, baking powder, 1 cup sugar and 3 teaspoons cinnamon; add butter, shortening, whole egg, egg yolk. With electric mixer at low speed or "blend" (or with spoon), mix well.
  3. Turn into 15 1/2 x 10 1/2 x 1 inch jelly roll pan; spread evenly with spatula. With fork beat egg white slightly; brush over dough. Combine remaining 1/3 cup sugar, 1 teaspoon cinnamon and nuts; sprinkle over top of dough.
  4. Bake 25 minutes or till nuts are golden.
  5. Cool in pan, then cut into 2 x 1 inch bars.

Recipe yields about 6 dozen.
