2 cups All-Purpose Flour
1/4 tsp. salt
3/4 cup vegetable shortening
1 cup granulated sugar
1 large egg
1 and 1/2 cups shredded coconut
1 (10 oz.) jar cherry preserves
Preheat oven to 350 degrees. Lightly grease a 9x13" baking pan.
Combine flour and salt; set aside.
In a large bowl cream shortening and sugar. Beat in egg and vanilla. Gradually blend in dry ingredients. Stir in coconut with wooden spoon.
Press three quarters of dough evenly into pan. Spread cherry preserves over dough. Crumble remaining dough over preserves.
Bake for 25-30 minutes, until firm and lightly colored on top. Cool in pan on a wire rack before cutting into squares.
