Cherry Coconut Bars


1/2 cup butter or margarine
3 Tbls. confectioners sugar
1 1/4 cups flour
1 cup granulated sugar
2 eggs
1/4 tea. salt
1/2 tea. baking powder
1/2 cup chopped walnuts
1/2 cup flaked coconut
1/2 cup quartered maraschino cherries
1 tea. vanilla


Preheat oven to 350. Grease a 9x13 baking pan.

In a mixing bowl combine butter, confectioners sugar and 1 cup of the flour. Work together with fingers until mixture resembles fine crumbs. Press into pan and bake for 15 minutes.

Meanwhile, in mixing bowl beat granulated sugar and eggs until light and fluffy. Stir in remaining flour, salt and baking powder. blend until smooth. Add remaining ingredients; mix well. Spread on cake in pan. Bake in preheated oven for 25 minutes. Cool in pan; cut into 3 x 3 inch bars.

Recipe yields 18 bars.
