Chicken and Rice Salad with Cashews
- 3 cups Cooked rice
- 2 cups Coarsely diced cooked chicken
cup Diced celery
- 2 green onions, chopped
- 1 tbl Fresh lemon juice
- 1/2 cup chopped salted cashew nuts
- 3/4 c salad dressing or
- salt and pepper
- chopped salad greens
- Combine rice, chicken, celery, onion, lemon juice and nuts.
salad dressing and mix lightly.
- Season to taste with salt and
- Chill, and serve on salad greens.
