3 cups Cooked rice
2 cups Coarsely diced cooked chicken
1/2 cup Diced celery
2 green onions, chopped
1 tbl Fresh lemon juice
1/2 cup Chopped salted cashew nuts
3/4 c Salad dressing or mayonnaise
salt and pepper
chopped salad greens
Combine rice, chicken, celery, onion, lemon juice and nuts.
Add salad dressing and mix lightly.
Season to taste with salt and pepper.
Chill, and serve on salad greens.
