Sweet Potato Casserole with Praline Topping

This Sweet Potato Casserole is so delicious, and topped with a yummy praline topping, you will be tempted to eat it for dessert.

Ingredients:

  • 3 cups cooked and mashed sweet potatoes
  • 1/2 tsp. salt
  • 1 tsp. vanilla
  • 1/2 stick butter
  • 2 eggs
  • 1 cup granulated sugar
  • 1/2 cup milk (regular or evaporated)
  • 1 cup brown sugar (light or dark)
  • 1/2 cup pecans or walnuts, chopped
  • 1/2 stick butter, melted
  • 1/3 cup flour
  • 1 cup marshmallows (optional)

Directions:

  1. Preheat oven to 350 degrees.
  2. For casserole filling: In a large glass bowl combine the potatoes, salt, vanilla, butter, eggs, granulated sugar and milk. Pour evenly into a 13x9 casserole dish.
  3. For the nut topping: Mix together the brown sugar, nuts, melted butter and flour. Top the potato casserole and bake 350 for 30 minutes.
  4. You can top with marshmallows in the last 5 minutes of cooking.
