Crawfish Squash Fritters
- 1 egg
- 1 sm. onion, chopped
- 1/4 c. flour
- 1/4 c. self-rising corn meal
- 1/2 lb. crawfish tails, chopped
- 1/2 c. buttermilk
- 2 c. cooked squash
- 1/2 t. salt
- Combine all ingredients and mix well.
- Drop by teaspoon into hot oil.
until golden brown.
- Serve immediately.
