Crawfish Squash Fritters

Crawfish Squash Fritters

Ingredients:

  • 1 egg
  • 1 sm. onion, chopped
  • 1/4 c. flour
  • 1/4 c. self-rising corn meal
  • 1/2 lb. crawfish tails, chopped
  • 1/2 c. buttermilk
  • 2 c. cooked squash
  • 1/2 t. salt

Directions:

  1. Combine all ingredients and mix well.
  2. Drop by teaspoon into hot oil.
  3. Fry until golden brown.
  4. Serve immediately.
