Cracklin Cornbread

Cornbread that is kicked up a notch! The addition of the cracklin's sure brings out the flavor of this cornbread!

Crackling Cornbread Recipe

Ingredients:

  • 1 1/2 cups corn meal
  • 1/4 cup flour
  • 1 teaspoon soda
  • 1 teaspoon salt
  • 2 cups buttermilk
  • 1 egg
  • 1 cup finely cut cracklings or crumbled crisp bacon

Directions:

  1. Sift together dry ingredients.
  2. Add buttermilk and egg, stirring until well mixed.
  3. Season cracklings with additional salt to taste and fold in last.
  4. Pour batter into very hot, well greased iron skillet or muffin pan (12 muffins).
  5. Bake in 450 degree oven for about 25 minutes.
