Maque Choux (Cajun Smothered Corn)

This is a favorite Cajun dish.



  1. Use fresh corn when possible. Canned or frozen may be subsituted.
  2. Sauté chopped onions and celery in oil until wilted.
  3. Add tomatoes and pimento. Cook 20 minutes.
  4. Add corn and season well. Continue cooking until corn becomes tender.
Serves 6
