Pumpernickel Bread

Ingredients:

1 1/2 c White bread flour
1 1/2 tb Dry milk
1 1/2 ts Salt
1 c Rye flour
1/16 c Water
1/2 ts Instant coffee
1/4 c Cornmeal
2 1/2 tb Cocoa, powdered
2 1/2 ts Yeast, fast rise or machine
2 tb Butter
2 tb Sugar
2 ts Caraway seeds
3 1/2 tb Molasses
3 1/4 ts Yeast, active dry

Directions:

This heavy, dark bread is a traditional pumpernickel - the kind that will have you reaching for smoked salmon and cream cheese.

The loaf is shorter and denser than most because of the heavy flours, which call for an extra knead. With bread machines, that simply means one extra button to push.

Success Hints Remember the extra knead - use the "whole wheat" cycle or simply restart the machine after the first knead.

Use regular cycle. 3 1/4 ts Yeast, active dry - or - 2 1/2 ts Yeast, fast rise or machine

Yields 1 loaf of Pumpernickel Bread
