Absolutely Apricot Bread

Ingredients:

1 tb Butter
1 tb Dry milk
1 ts Salt
1 ts Yeast, fast rise or machine
1/2 c Dried apricots, chopped
2 c White bread flour
3 tb Apricot jam
3 ts Yeast, active dry
3/4 c Water

Directions:

  1. Use the "light" crust feature if your machine provides it.
  2. Use dried apricots preserved without sulfur dioxide, which sometimes deactivates the yeast.
  3. Use a jam with a high fruit content and few other additives.
  4. Use regular, rapid or delayed time bake cycle. 1 ts Yeast, fast rise or machine, or 3 ts Yeast, active dry.

Makes 1 loaf of bread.


The finely textured sweet bread also happens to be lovely, with the summery orange apricots floating in the golden loaf.
