Mushroom Casserole

Ingredients:

  • 12-oz. fresh mushrooms
  • 1/4 cup chopped onion
  • 1/2 stick butter
  • Mixed herbs of your choice
  • 1/3 cup heavy cream
  • 1 large egg
  • 2 large egg yolks
  • 1 cup grated Swiss cheese

Directions:

  1. Preheat oven to 325ºF and grease casserole dish with butter.
  2. In skillet, sauté mushrooms and onion in the butter. Add the herbs and cook for about 4 minutes.
  3. In a bowl, combine the cream, egg and the egg yolks.
  4. Sprinkle the Swiss cheese all over the bottom of the casserole, put mushroom mixture on top, then pour cream/egg mixture over that.
  5. Bake 30 minutes or until browned and bubbly.

Approximately 7 total carbs.
