Deep South Ham & Redyeye Gravy
- 1 tbl butter
- 1 ham steak about 1 1/3 lbs
- 1 cup strong coffee
- 3/4 teap. sugar
- 1/4 tea hot pepper sauce
- Place 10" skillet over med-high heat until hot. Add butter, tilt skillet
to coat bottom. Add ham steak, cook 3 min. turn cook 2 min longer.
- Remove ham; place on service platter and set aside. Increase heat to
high, add coffee, sugar, pepper sauce.
- Bring to boil and continue
boiling 2 to 3 min until reduced to 1/4 cup liquid, scraping bottom and
sides spoon over meat
