Bob Hope's Favorite Lemon Pie

Ingredients:

Directions:

  1. Combine sugar and cornstarch, mix, add water slowly stirring until mixture is thick and smooth.
  2. Add beaten egg yolks, butter and lemon juice, grated lemon rind and a pinch of salt. Cook 2 or 3 minutes.
  3. Pour into 9-inch baked pie shell.
  4. Make meringue with egg whites, adding 8 tablespoons sugar as they are beating.
  5. Bake at 325 degrees for 15 or 20 minutes until golden brown.
