Bob Hope's Favorite Lemon Pie
- 1 c. sugar
- 3 tsp. cornstarch
- 1 c. boiling water
- 4 eggs, beat
- 2 tsp. butter
- 1/4 c. lemon juice
- 1 tsp. grated lemon rind
- Pinch of salt
- Combine sugar and cornstarch, mix, add water slowly stirring until
mixture is thick and smooth.
- Add beaten egg yolks, butter and lemon
juice, grated lemon rind and a pinch of salt. Cook 2 or 3 minutes.
into 9-inch baked pie shell.
- Make meringue with egg whites,
adding 8 tablespoons sugar as they are beating.
- Bake at 325 degrees for
15 or 20 minutes until golden brown.
