Easy Shrimp Creole Recipe, Damaging Food Joke... - March 04, 2005

Hi Y'all, How are you today? We hope your week has been good! Georgette is quacking up today, it's Thursday, think she is going out Friday to shed some feathers! :o)
~~~Justin Wilson-Cookin' Cajun Cookbook~~~ For those who want to know the secrets of Cajun cooking, or for those who simply want mouthwatering recipes, Wilson' Cookin' Cajun fits the bill. Savor, for example, Wild Duck and Turnips, Cajunized Oriental Pork Chops, Stuffed Cucumbers, and Leftover Spaghetti Casserole. Also enjoy a variety of recipes under the "Cooking in a Bag" section, in which Wilson gives away the secret for cooking meats quicker-and making them more tender-than non-Cajuns ever dreamed of. These are but a smattering of the many certain to please recipes in this book, many of which were developed for Justin Wilson's TV show.
Today's Recipe:

Easy Shrimp Creole

1 can crushed tomatoes (16 oz.)
1 medium onion, chopped
1 medium green pepper, chopped
1/2 tsp. pepper
1/2 tsp. chili powder
1/4 tsp. cayenne pepper
1 medium bay leaf
1 lb. small or medium Shrimp, shelled and deveined (or Scallops)

Combine all ingredients except Shrimp. Microwave until boiling. Add Shrimp. Microwave about 8 minutes or until Shrimp are just cooked. Rest 5 minutes. Serve over rice.

"I ate this at the Pasta Garden restaurant in Baton Rouge. It had shrimp, mushrooms, green onions and a wonderful sauce served over fettuccine. I really loved this, does anyone know how to make it?
