Today's Recipe:

Coconut Beer Batter Shrimp

Ingredients:
2 Eggs
1 3/4 c All-purpose flour
3/4 c Beer (6 oz.)
1 tb Baking powder
4 Dozen medium shrimp, peeled
and deveined (leave tails
on),
About two pounds.
3 c Grated coconut, about 6 oz.

Instructions:
Seasoning mix: Cayenne pepper 1Tbls.
Salt 2 1/4tsps.
Sweet paprika 1 1/2tsps.
Black pepper 1 1/2tsps.
Garlic powder 1 1/4tsps.
Onion powder 3/4tsps.
Dried thyme 3/4tsps.
Dried oregano 3/4tsps.
Vegetable oil for deep frying.

** Thoroughly combine the ingredients for the seasoning mix in a small bowl and set aside.
Mix 1 1/4 cups of the flour, 2 tsps. of the seasoning mix, baking powder, eggs, and beer together in a bowl, breaking up all lumps until it is smooth.
Combine the remaining flour with 1 1/2 tsps. of the seasoning mix and set aside.
Place the coconut in a separate bowl.
Sprinkle both sides of the shrimps with the remaining seasoning mix.
Then Hold shrimp by the tail, dredge in the flour mixture, shake off excess, dip each in batter and allow excess to drip off.
Coat each shrimp with the coconut and place the shrimp on a baking sheet.
Heat deep fryer to 350 degrees.
Drop each shrimp into the hot oil and cook until golden brown, about 1/2 to 1 minute on each side.
Do not crowd the fryer! Drain on paper towels and serve immediately, as is, or with a dipping sauce or fruit preserve.
(Six main dish or twelve appetizer servings.)

Southern Horoscopes

BOILED PEANUTS
Sept 24 - Oct 23 You have a passionate desire to help your fellow man. Unfortunately, those who know you best - your friends and loved ones - may find that your personality is much too salty, and their criticism will probably affect you deeply because you are really much softer than you appear. You should go right ahead and marry anybody you want to because in a certain way, yours is a charmed life. On the road of life, you can be sure that people will always pull over and
stop for you.

BUTTER BEAN
October 24 - Nov 22
Always invite a Butter Bean because Butter Beans get along well with everybody. You, as a Butter Bean, should be proud. You've grown on the vine of life and you feel at home no matter what the setting. You can sit next to anybody. However, you too, shouldn't have anything to do with Moon Pies.

ARMADILLO
Nov 23 - Dec 21
You have a tendency to develop a tough exterior, but you are actually quite gentle. A good evening for you? Old friends, a fire, some roots, fruit, worms and insects. You are a throwback. You're not concerned with today's fashions and trends. You're not concerned with anything about today. You're really almost prehistoric in your interests and
behavior patterns. You probably want to marry another Armadillo, but Possum is another somewhat kinky, mating possibility.

This concludes the Southern Horoscopes! Stay tuned to the next newsletter for other Southern trivia!

Kitchen And Household Tips:

You can use lifesaver candies as candle holders on kids birthday cakes.

Instead of throwing away your bread crusts, or those heels that lots of folks don't like, run them through a food processor then freeze in plastic bags. If you prefer them seasoned, add seasoning while running through food processor. Next time when you need bread crumbs, just take them out of the freezer and use!

To save time, money, and a mess, Use plastic bags to coat your meats or veggies. Just place the breading in the bag, then place your items in the bag and shake. Much easier!
