Beautiful Coconut Cake

"I am 61 years young & I remember so well when all our kids were at home (20 years ago!) I cooked a coconut layer cake and I placed it on a beautiful silver cake plate and proceeded to frost the cake. The plate had handles on each side, so it was easy to spin the plate as I added frosting. I was so wrapped up in my cake with 3 kids & husband watching & waiting for a yummy piece of cake, when all of a sudden it went spinning off the table into the floor!!!! It was hard to believe, but it was not totally destroyed.....We picked up the top part of the cake and put it back on the plate! We laughed while we enjoyed our beautiful (sorta scrambled) coconut cake...We all have a good laugh now when we get together & there is a coconut cake on hand. I will send more later....(oh yea, there are others!) those special times bring back great memories.
