Wild Duck with Mushrooms

Recipe

Ingredients:

  • 1 Duck1 onion, sliced
  • 1/2 cup butter or drippings
  • Salt and pepper
  • 1 cup fresh mushrooms - sliced
  • 2 cups water
  • 1 bay leaf
  • 2 tablespoons flour
  • 1/8 teaspoon powdered thyme

Directions:

  1. Prepare and disjoint duck, brown with onion and baste with fat.
  2. Add salt, pepper, water, and bay leaf.
  3. Cook 1 1/2 hours over low heat.
  4. Sauté mushrooms, add flour and thyme.
  5. Add to duck and continue to cook 30 more minutes.
  6. Serve with wild rice.
