Sautéed Dove or Quail

Ingredients:

  • Doves or quail

Directions:

  1. Clean the Dove Or Quails Split birds down the back. Dust lightly with flour and sauté in butter.
  2. Brown quickly on skin side; turn and cook on bone side and turn again.
  3. Reduce heat and continue cooking until birds are tender.
  4. Depending on size of birds, it will take from 15-20 minutes.
  5. Season birds with salt and pepper to taste.
  6. Remove birds from skillet and add 1/2 cup of dry wine to drippings.
  7. Bring to boil and serve as clear gravy.
