Dove or Quail Breasts

Recipe

Ingredients:

  • 12-18 breasts
  • 1 diced medium onion
  • 1 can cream of mushroom soup
  • 1/4 to 1/2 cup sherry (optional)
  • Pinch of oregano
  • Pinch of crushed rosemary
  • Salt and pepper to taste
  • 1/2 pint sour cream

Directions:

  1. Clean Dove Or Quail.
  2. Place breasts meaty side down in 15X12 inch baking dish. Do not over-crowd.
  3. Sauté onions in small amount of fat in skillet.
  4. Mix onion, sherry, herbs, salt, and pepper. Pour over bird breasts.
  5. Cover baking dish lightly with foil.
  6. Bake in 325 degree F. oven for 1 hour, turning occasionally.
  7. Add sour cream. Stir, bake about 20 minutes longer.
