Microwave Hollandaise Sauce

This tasty hollandaise sauce is easy and you make it right in your microwave! Made with butter, egg yolks, lemon juice, half and half and more.

Ingredients:

  • 1/4 c (1/2 stick) butter or Margarine
  • 1/4 c Half-and-half
  • 2 Egg yolks, beaten
  • 1 tb Lemon juice or vinegar
  • 1/4 tsp. Salt
  • Dash ground red pepper

Directions:

  1. Melt butter in a 1-quart glass measuring pitcher in microwave oven (about 1 minute at High).
  2. Add half-and-half, egg yolks, lemon juice, salt and red pepper; mix thoroughly.
  3. Cook uncovered 2-1/2 minutes at Medium, or until sauce is thickened; stir.
  4. Remove from oven and beat until light.

Yield: 3/4 cup.
