Creamy Polenta

Easily make this creamy polenta right in your microwave. Made from cornmeal, Parmesan cheese and more.

Ingredients:

  • 2 1/2 c Water
  • 1/2 c Yellow cornmeal
  • 1/2 tsp. Salt
  • 2 tb Grated Parmesan cheese
  • 1 tsp. Olive oil
  • 1/8 tsp. Black pepper

Directions:

  1. Stir together the water, cornmeal, and salt in a microwave-safe 1-quart measure.
  2. Microwave, uncovered, on HIGH for 5 minutes. Whisk well. Cover with waxed paper.
  3. Microwave on HIGH for an additional 5 minutes.
  4. Add the Parmesan, oil, and pepper; whisk until smooth.
  5. Spoon onto plates to serve.

Makes 4 servings.
