Bread Pudding

This delicious bread pudding is easy as well a good! Just make it right in your microwave.

Ingredients:

  • 2 tb Butter
  • 2 Eggs
  • 1 c Milk
  • 1/3 c Sugar
  • 1/4 c Raisins
  • 1 tsp. Vanilla extract
  • Salt to taste
  • 1 1/2 c Cubed day-old bread

Directions:

  1. Preheat oven to 400 degrees.
  2. In a 1-quart micro-safe casserole, melt butter.
  3. Add the eggs and beat well.
  4. Stir in the milk, sugar, raisins, vanilla and salt.
  5. Add the bread cubes and toss to cover completely.
  6. Stir a few times to help the bread cubes absorb the liquid cook until set, approximately 20 minutes.
