Beef and Sauerkraut

Recipe

Ingredients:

  • 1 small onion, chopped
  • 1 pound ground beef
  • 1/2 cup uncooked rice
  • 1 small can sauerkraut
  • 1 can water
  • 3 tablespoons shortening
  • 1 tablespoon flour
  • Pepper to taste

Directions:

  1. Mix meat, rice and chopped onion and pepper into balls. Place in pan.
  2. Cover with sauerkraut and water.
  3. Simmer about 1-1/2 hours.
  4. Make roux; heat shortening, add flour and cook until brown.
  5. Mix with meat balls and kraut.
  6. Cook a short while longer; 5 to 8 minutes being careful not to burn.
  7. Serve with boiled potatoes.

Serves 4.
