Frische Tomatensuppe (Fresh Tomato Soup)

Recipe

Ingredients:

  • 6 Tomatoes; Medium Size OR 2 lb Italian Plum Tomatoes
  • 1 Onion; Chopped
  • 1 Celery; Stalk, Chopped
  • 2 c Chicken Broth
  • 1 T Tomato Paste
  • 1/2 t Basil; Dried
  • 1/4 t Pepper; Freshly Ground
  • 1/2 t Salt 1/2 c Yogurt

Directions:

  1. Cut tomatoes into wedges and place in 1 1/2-quart saucepan with all ingredients except yogurt.
  2. Simmer uncovered 30 minutes.
  3. Strain to remove tomato skins and seeds.
  4. Adjust seasonings.
  5. Garnish with spoonful's of yogurt.
