Pumpernickel Bread

Pumpernickel Bread

Ingredients:

  • 1 1/2 c White bread flour
  • 1 1/2 tb Dry milk
  • 1 1/2 ts Salt
  • 1 c Rye flour
  • 1/16 c Water
  • 1/2 ts Instant coffee
  • 1/4 c Cornmeal
  • 2 1/2 tb Cocoa, powdered
  • 2 1/2 ts Yeast, fast rise or machine
  • 2 tb Butter
  • 2 tb Sugar
  • 2 ts Caraway seeds
  • 3 1/2 tb Molasses
  • 3 1/4 ts Yeast, active dry

Directions:

  1. The loaf is shorter and denser than most because of the heavy flours, which call for an extra knead. With bread machines, that simply means one extra button to push.
  2. Remember the extra knead - use the "whole wheat" cycle or simply restart the machine after the first knead.
  3. Use regular cycle. 3 1/4 ts Yeast, active dry - or - 2 1/2 ts Yeast, fast rise or machine.

Yields 1 loaf of Pumpernickel Bread
