STRAWBERRY CREAM CAKE ROLL
Ingredients
4 EGGS
1 Tsp vanilla extract
3/4 cup sugar
3/4 cup sifted cake flour
1 Tsp baking powder
1/4 Tsp salt
confectioners' sugar (powdered)
FOR CREAM FILLING;
1Cup whipping cream
1/4 Cup sugar
1/2 Tsp. vanilla extract
2 Cups fresh or frozen strawberries, cut up
confectioners' sugar
Additional whole strawberries
Whipped cream (optional)
A greased & waxed paper jelly-roll pan
Directions
In a mixing bowl, beat eggs & vanilla on high speed with mixer for 5 min. or until lemon
colored. Gradually add sugar, beating until dissolved. Combine flour, baking powder &
salt; fold gently into egg
mixture just until combined. Pour into a greased & waxed jelly roll pan.
Spread batter evenly into pan. Bake 375F.preheated oven for 10-12
Min. or until golden brown. Turn out onto a cloth that has been
sprinkled with confectioners' sugar. Peel off wax paper from cake, roll
up in cloth,& let rolled cake cool. FOR FILLING; Whip cream, sugar,&
vanilla. Unroll cake & spread filling over cake; Sprinkle with strawberries.
Roll cake up again & chill for 2 hours before serving;
Sprinkle with confectioners' sugar; Garnish with whole strawberries &
